Vegan sushi time!

Hey everyone!  I have been super busy lately, and haven't had time to post.  I still am, BUT, I'm sneaking in a quick one!

The other night we made some vegan sushi and it was delish! {and easy too!}

So, here are a few photos from the other night.

Lay out your nori sheets

Chop up whatever yummy veggies you like.  We did carrots, daikon radish, green onions, cucumber and avocados.

Layer your sticky rice and veggies like so...

Roll it up... like a pro!

Cut.  Put on a cute plate and garnish with yummy sauces!

Enjoy your guilt free sushi!

This seriously is super easy and soooo good!  Give it a try.  I know you will love it!

hello summer?...

wait... it's still February, right!?! I swear it felt like early summer today! I got off work and it was almost 80 degrees! My car actually told me it was 81, but it lies. See...

I knew it was wrong, but I was still excited!  It was actually 77, so pretty close, and pretty amazing for February!

This kind of weather called for some sort of celebration!  My idea was to just pass out in the sun, but my friend had a better idea!  She called saying she wanted to BBQ and then informed me that it was national margarita day!  So that is just what we did!

We started out with a few of these.  YUM!  and YES, we did have chips and guac to go with them. LOL.  They go together like peas and carrots!

Then we were super awesome and started the fire for our BBQ.  I have to be honest, this was the first time I did it myself.  Matt always does it, so I am pretty excited that we had such an awesome fire.

That's our fire pit/BBQ grill.  Matt made it out of random extra parts.  Pretty cool, huh!?

 Are you drooling yet?  You should be!  It was delicious!  We actually enjoyed it so much we threw some more mushrooms on the grill.  They are my fav!

So there you go!  That's why I feel like it's summer already.  That and the fact that I've already bought some new summer dresses, and I'm itching to wear them!

Is anyone else feeling like it should be summer already?

I know we hardly had a winter, but I'm ready!

Insta-Friday {picture overload}

Hey there!  Remember how I was slacking at life and taking no pictures lately?  Well, I more than made up for it this week!  I've overloaded on Instagram pictures!  Last weekend was super fun, and this week wasn't too shabby either.  So, here we go.  Let me guide you through my week with pictures.

First off, I finally got to wear some of my new thrifted shoes! Love them!

Then I got to hang with this awesome guy. Isn't he the cutest?!

Last weekend was my father-in-law's 50th birthday.  We had a party and all of his brothers and sisters flew out to surprise him.  It was lots of fun.  We did some exploring, played some cards and had some drinks. Good times!

We took the out-of-towners around for a mini tour of the town.  We started with the old railroad bridge, and the creek.  It was so pretty!

They just revamped the creek to get it back to the way it used to be.  I thought they were going to ruin it, but it looks pretty nice now that all the tractors are out!

We stopped off at the community garden to check it out.  How fun are these planters?!

The garden was full of lady bugs! LOVE!

We took a little drive up to 'our spot'

I wish I could say we one that hand.  We got pretty dang close though!

We had one rainy day this week, and the rest were fabulous, so I got some more sun time in after work.

oh yeah, did I mention that we got some amazing blood oranges this week?!

Friends and Lovers

Hey everyone!  Happy Valentines Day!  I'm not a huge V-day celebrator, but one more reason to tell someone you love them has to be a good thing. Right?  I'm not going to get all gushy and tell you about how much I love my husband {which I do} I'm just going to share with you my current favorite love song.  Yes, it happens to be by my boyfriend I mean Incubus.  I love this song.  I love this whole album actually.  So, hear you go.  Enjoy.

Insta-Friday & a mini adventure

I'm not sure how this happened, but it's Friday again!  How did this week go by so fast?  and how have I not posted in a week?  Craziness I tell you!

Last weekend we went out on a mini adventure.  We headed out without a plan and had a pretty great day.

It's hard to tell, but that is a cool rock wall-water feature behind us.

We played tourist and walked around checking out cool buildings and whatnot.

Like this water tower.  Isn't it neat?!  A few of Matt's cousins actually worked on this, so it was neat to check it out.

We ended up at a great vegan cafe that neither of us had been to before.  It was super yummy!

We had a very delicious kale salad

and a very fresh and delightful veggie pizza!  If you have never tried broccoli on your pizza, do it!  It was awesome!!!

I have a busy weekend ahead of me {all full of fun things!} I can't wait!
